ASSISTANT MANAGER

Summary of Position: The Assistant Manager is responsible for customer service and daily FOH operations; support Back of the House (BOH) team members; and support General Manager and CEO particularly in the areas:

 

FOH SUPPORT

  • Facilitate positive guest's experience from start to finish, managing and leading the team according to our goals. 
  • Work with FOH team on all functions of the retail store to include opening, mid- or closing shift, including guest relations, supervision of all staff and staffing levels, proper restaurant ambiance, housekeeping, and set-up, food & beverage quality, safety and pace, and ensures that the shift is run in a smooth manner.
  • Maintain safe, secure, and a healthy facility environment by following, and enforcing sanitation standards and procedures; proper safety procedures, equipment maintenance, etc., and complying with health and legal regulations. 
  • Support General Manager  & CEO   with development of SOPs for BOH and FOH procedures, practices, inventories and ordering.
  • Support Assistant Manager of Hospitality with planning and posting for social media via Romeo Chocolates.  
  • Support General Manager  & CEO with processing, fulfilling and shipping of online orders and delivery platforms.  
  • Cultivate customer service standards and positively coaches and counsels staff to achieve the highest quality of service in all areas of the retail shop.

 

BOH SUPPORT

  • Assigning and delegating to BOH team members in consultation with GM
  • Coordinates with Managers & Chefs on production needs for online, wholesale, and Brick & Mortar orders
  • Coordinates online, delivery, and shipping orders
  • Coordinates online store and inventory.
  • Replenishes orders with partner vendors.  
  • Training new FOH members on customer service, dessert recipes, coffee,beer, wine and other drinks.  
  • Organization, sanitation, and deep cleaning of BOH
  • Mise en place of ingredients and equipment and molds
  • Baking production of cookies, brownies, shortbreads and other projects as assigned
  • Chocolate production of chocolate bars, novelty gifts, and truffles
  • Preparing COGs and retail pricing suggestions in collaboration with FOH team and GM

Qualifications/Expectations: ▪ Must have safe food handling certification. ▪ Fully vaccinated

Minimum 1 year management experience, 2 years preferred.  Must be able to communicate effectively and delegate tasks. ▪ Has people skills and the ability to work well with the team and customers. ▪ Is naturally creative and eager to grow and maintains a positive attitude and friendly demeanor. ▪ Demonstrates a willingness to always help others. 

Reports to: General Manager & CEO

Wage: $16-$18 /hr plus tips & chocolate perks! (adjusts based on California wage increases). This position will be expected to work approximately 40 hours per week on average but not guaranteed. Location: 460 Pine Ave, Long Beach, CA 90802

BOH SHIFT LEADER - PASTRY & CHOCOLATES


Summary of Position: The BOH SHIFT LEADER is responsible for the daily baking and chocolate operations to support the Chefs and other BOH team members; particularly in the areas:

  • Assigning and delegating to BOH team members in consultation with Assistant Manager and GM
  • Coordinates with Managers & Chefs on central kitchen production needs for online, wholesale, and Brick & Mortar orders
  • Organization, sanitation, and deep cleaning of BOH
  • Mise en place of ingredients and equipment and molds
  • Baking production of cookies, brownies, shortbreads and other projects as assigned
  • Chocolate production of chocolate bars, novelty gifts, and truffles
  • Assists with replenishment orders with partner vendors such as Chef Warehouse, farmers markets, etc.
  • Conceptualizing and presenting R&D recipes with Chefs

Wage: $14 -$16 /hr plus tips & chocolate perks! (adjusts based on California wage increases). This position will be expected to work approximately 20-40 hours per week on average but not guaranteed and depending on holiday seasonality.

SALES ASSOCIATE & SHIFT LEADER

Summary of Position:

 

  • Excite Customer about our craft and product and Drive Sales
  • Inform and host customers by creating a lively platform of continuous interaction via sampling and talking about the art of chocolate sourcing & creation.
  • Create unique hand­crafted chocolate products such as bonbons, truffles, chocolate bars, & dipped strawberries
  • Serve coffee, beer & wine (candidates must be 21 and over)
  • prepare food labels and pack all produced products
  • Share in ­depth chocolate and product knowledge, handling and storage knowledge with customers
  • Assist with chocolate tasting events, chocolate & wine pairings, chocolate making workshops
  • Assist the Principal Chocolatier with programs, initiatives, and sales and take work direction to help further the goals of Romeo Chocolates

 

Food Handling & Hygiene

  • Maintain a clean and organized demonstration station, uniform, personal cleanliness and grooming
  • Adhere to all food, health, and safety guidelines and laws, including Company chocolate ­handling standards
  • Cleaning and maintenance of equipment and station
  • Candidate must have safe food handling certification (online course available online) Quality Control
  • Quality control of the store's chocolate products to maintain quality assurance standards and brand expectations
  • Open and close demonstration station, including following procedures and checklists to ensure smooth overall operations
  • Ensure created products are fully ­stocked, merchandised, consistent, and pass quality control

 

Specific Knowledge and Skills:

  • Knowledge of handling and storing food
  • Product knowledge and superior presentation skills, including public speaking
  • Outgoing personality with exceptional interpersonal skills with the ability to relate to a broad spectrum of Guests
  • Experience in food handling and presentation desired

Education and Work Experience:

  • Minimum one year in food­ related role with exceptional guest service performance or one year in luxury

retail and customer service role

  • Safe food handling certified required
  • Chocolate and/or pastry experience preferred
